Seriously, this takes minutes and is ridiculously delish:
Serve 2 -3
Ingredients
250g vacuum packed beetroot, unwrapped (obvs) and sliced (full of potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre)
120g of ready to eat puy lentils - heated in microwave, as per instructions (great source of protein and vitamin A and C)
Sml bunch of parsley finely chopped (good for your digestive system)
Sml bunch of basil finely chopped (rich in antioxidants)
Around 10-12 whole basil leaves
Two handfuls of washed baby spinach (rich in iron, good source of fibre and packed with antioxidants)
30g of crumbled goats cheese (great source of calcium, vitamin B and phosphorus)
15g of slightly crushed hazelnut kernels (vitamin E for your skin, oleic acid for your ticker)
1tbsp of olive oil (super healthy fats that are good for your heart, your immune system and all sorts of other exciting stuff)
Salt and pepper to taste (use salt sparingly...)
A drizzle of balsamic glaze
Method
- Add lentils to a mixing bowl
- Add chopped basil, parsley, spinach and olive oil to bowl and season to taste
- Take two/three bowls, or plates, and share lentil mix evenly between them (or, sneak a little bit more into your bowl - entirely up to you)
- Evenly share sliced beetroot between the two bowls (or see bracket above)
- Sprinkle each bowl with a share of the goats cheese, hazelnuts and whole basil leaves
- Drizzle with balsamic glaze
- Enjoy (possibly in a cupboard on your own with your epic lion's share)
